Off Skillet Empire: V-Day Dinner: Salmon, Rice, and Guacamole

This week's going to be a little different, in that I haven't cooked this one yet. I plan on cooking in on Saturday, so we'll see how it turns out. I'll be updating the page with pictures once I get them.

I'm using a recipe here, but making my own tweaks before-hand to make it my own. Serves 2.

Ingredients:

Rice:
-1 to 2 cups rice, cooked
-1 tbsp butter
-1 tbsp rosemary
-Lemon olive oil
-Lavender vinegar
Guacamole:
-2 avocados
-1/2 white or red onion (will use the other half later)
-1 garlic clove
-1/2 vintage tomato
-1 tbsp lime juice
Salmon:
-10 oz smoked salmon (package) OR 1/2 to 1 lb fresh salmon
-1/2 white or red onion
-2 cups skim milk
-2 tbsp flour
-2 cloves garlic
-6 tbsp butter
-1 tbsp lemon juice
-1/3 cup parmesan cheese
-1/3 cup romano cheese
-1 cup green peas, cooked (or thawed frozen)
-1/2 cup mushrooms, chopped
-1 lb uncooked penne pasta
-1 tbsp red pepper

Rice: Start the rice in a rice cooker or a pot with the correct amount of water (1:2 ratio rice to water), add in butter and rosemary, lightly salt and pepper. When cooked, fluff and toss in a couple tablespoons of lavender vinegar and lemon olive oil. I usually use these, but a light olive oil with lemon juice may work as well.

Guacamole: Pit and mash avocados, mixing in ingredients. Add salt and pepper to taste. Refrigerate.

Salmon: If using fresh salmon, preheat oven to 350°, coat salmon in olive oil, salt, pepper, and lemon juice. Cook through. If using smoked prepackaged salmon, continue below:

Add penne pasta to a pot of boiling water (10 cups), add salt and pasta, and cook until soft (or however you prefer it). Drain and let cool. Melt the butter in a large pan, and saute the onions, mushrooms, and garlic until soft, but not browned. Toss in the flour and slowly stir in milk. Bring to near-boil and add in cheeses until liquefied. Add in peas and cook on low for 5 minutes.

Add in smoked salmon plus lemon juice, or if you chose baked salmon, add in and break apart. Blend together and serve over pasta.

I'll be trying this Saturday, and I recommend some sort of wine with it. Since I know nothing about wine, I'll let you decide.
